www.ChefDuff.com www.ShanachiePub.com Preparation1. Cook pasta sheets in salted water, drain and reserve on plastic wrap. 2. In a large skillet, cook onions and carrots slowly over low heat in butter, without browning (sweat stage). 3. Add spinach and roasted garlic; season with salt and pepper; cook until heated. 4. Remove from pan and reserve. 5. Sauté turkey and drain fat; season with salt and pepper. 6. Combine vegetables and turkey. 7. In a 9" x 12" baking dish begin layering. Begin with a very thin layer of sauce. Then each layer will include pasta, turkey/vegetable mix, cheeses, sauce, herbs. Add indredients sparingly. Lasagna should be 4 - 5 layers thick. 8. Top layer will be turkey, then cheese, and sauce. 9. Crumble goat cheese, and bake.
