Preparation1. Slice yams into 1/2-inch thick pieces. Combine with pineapple, butter, sugar and cinnamon in 2-qt casserole. Microwave at high 4 minutes. Stir. 2. Sprinkle top with pecans and brown sugar. Microwave at high 2 to 4 minutes. If dish is not hot and topping not melted after 2 minutes, rotate dish 1/4 turn before continuing to microwave. Makes 6 to 8 servings Note: If desired, yams may be mashed with the first 4 ingredients, then cooked. Finish with brown sugar nut topping and continue to microwave as above. |
