Apple Pie Bites
You can also call these yummy treats Apples in a Blanket. These are made with sliced apples wrapped in puff pastry, like the classic Pigs in a Blanket party snack, but with sweet, spiced apples!

INGREDIENTS

20 apple slices (1-2 apples)

1 puff pastry sheets, thawed

¼ cup sugar

2 teaspoons apple pie or pumpkin pie spice

1 egg
Caramel Sauce for Dipping

1 cup granulated sugar
-
1 cup heavy cream, room temperature
-
¼ - ½ teaspoon salt
INSTRUCTIONS
Using the bake setting, preaheat your toaster oven to 400°F.
Unroll the puff pasty and gently roll it out to 10X12 rectangle. Cut into 1 inch strips along the short side creating 10 strips that are 12 inches long. Divide the 12 inch strips in half to create 20 strips that are 1x6.
In a small bowl combine the sugar and apple pie spice. Sprinkle 1/2 of the mixture on the sliced apples. Reserve the other 1/2.
Take each apple slice and roll it in one pastry strip like you would pigs in a blanket. Place on the baking sheet. Repeat until all the apples are rolled in pastry.
Combine the egg with 1 tablespoon of water to make an egg wash. Brush over the tops of the pastry dough. Sprinkle with the remaining sugar mixture.
Bake until pastry has risen, the tops are golden and the apples are just tender, about 20-25 minutes.
While the apple bites are baking, make the caramel sauce.
Add the sugar to a heavy-bottomed saute pan over medium heat and let the sugar melt without stirring. Continue to cook until the sugar turns a deep brown color around the edges, but is still clear in some places, 3 to 4 minutes, then turn off.
Stir, making sure all the sugar has melted. Slowly pour in the cream, stirring the entire time, and being careful because the sugar is very hot and will probably splatter. If the caramel sauce seizes up, just return it to the heat and stir until all the lumps dissolve. Stir in the salt and set aside to cool.
Remove apple bites from the toaster oven and serve with the caramel sauce for dipping.
