Maque Choux Pizza
Maque Choux is a classic Cajun side dish that combines corn, onions, peppers and cajun seasoning. It also makes an amazing pizza topping!
Two 8" Pizzas

INGREDIENTS

1 tablespoon olive oil, plus more for the crust

1 cup corn kernels about 1 ear

½ cup chopped yellow onion

¼ cup roasted red pepper, chopped

½ jalapeno pepper chopped
-
10-12 grape tomatoes sliced in half

salt and pepper

1 teaspoon Cajun seasonings
-
6 ounces cream cheese, warm (vegan or traditional)

2 tablespoons water
-
2 8-inch par-cooked pizza crusts
-
1 cup shredded Mozzarella cheese (vegan or traditional)

Green onions to garnish
INSTRUCTIONS
Preheat the oven to 450. Heat 2 cast iron skillets or cookie sheets while you prepare the toppings.
In a large skillet add the olive oil and heat over medium. Add the corn and onions and sauté until tender, about 5 minutes. Add the roared red pepper, jalapenos, and tomatoes and cook another 2-3 minutes unit tomatoes start to release their juice. taste and season with salt and pepper. Remove from heat and set aside.
In a small bowl combine the cajun seasoning, cream cheese, and water. Evenly divide the sauce among the crusts. sprinkle with ½ cup of cheese per pizza. Top with ½ of the corn mixture. Brush the crust with a little more olive oil. carefully remove the skillets from the oven and add the pizzas.
Bake until the cheese is golden brown and bubbly, about 10-15 minutes. Remove from the oven and garnish with green onions.
