INGREDIENTS
1 cup mayonnaise
1 cup shredded fontina cheese
1/3 cup grated Parmesan cheese
½ teaspoon garlic powder
¼ teaspoon sriracha sauce
1 large Vidalia onion, cut into 1-inch pieces (about 2 cups)
1 cup well drained marinated quartered artichoke hearts Sweet potato chips
INSTRUCTIONS
Set the toaster oven to Bake, Convection to 350°F. for 30 minutes. While the toaster oven is heating, place the mayonnaise, ½ cup fontina cheese, the Parmesan cheese, garlic powder and sriracha into a food processor. Cover and process until smooth.
Add the onion and artichokes. Cover and pulse 10 or 15 times or until the onion and artichoke hearts are coarsely chopped. Season to taste with salt and pepper. Spoon the mixture into a 1-quart baking dish. Sprinkle with the remaining ½ cup fontina cheese.
Bake until the cheese is melted and lightly browned. Serve with sweet potato chips or your favorite dippers.
