EASY TIRAMISU
Easy Tiramisu
A small batch version of tiramisu for two. This easy dessert is made with mascarpone and fresh espresso. Allow it to sit overnight for the perfect sweet treat.

INGREDIENTS
4 oz. espresso
3 tablespoons sugar, divided
2 tablespoons marsala (optional)
4 oz. mascarpone
1 teaspoons vanilla extract
½ cup heavy whipping cream
1 package lady fingers
¼ cup cocoa powder
INSTRUCTIONS
Brew 4 shots of espresso. In a bowl, combine espresso and add 2 tablespoons of sugar and marsala. Stir to dissolve sugar and allow to cool.
Whip mascarpone, remaining 1 tablespoon of sugar and vanilla until creamy. Add heavy cream and whip until stiff peaks form.
Briefly dunk ladyfingers in cooled espresso mixture. Place in a single layer in the bottom of a small glass. You may need to break the cookies to make them fit.
Dust with cocoa powder. Top with mascarpone cream.
Repeat for a second layer. Top with dusting of cocoa powder chill at least 4 hours or preferably overnight. Serve.
