To make the garlic paste, place minced garlic on a cutting board and sprinkle with coarse salt. Using the flat of a knife, rub the garlic into the cutting board until it forms a smooth paste. This ensures the garlic is distributed evenly throughout the spread.

Combine feta, cream cheese, and mayonnaise in a food processor. Add garlic paste, herbs, salt and pepper. Pulse to combine, scraping down the bowl as necessary.

Taste and adjust seasonings if necessary.

Serve at room temperature with crackers, or an assortment of vegetables. The spread can be kept in the refrigerator, tightly wrapped in plastic, for up to a week.
