INGREDIENTS
12 ounces frozen mango chunks (about 2 ½ cups)
1 ½ cups limeade, chilled
½ cup tequila
¼ cup orange simple syrup (1/4 cup store-bought simple syrup plus ½ teaspoon orange extract)
1 lime wedge
Chili-lime seasoning or kosher salt (to coat rim of glass)
INSTRUCTIONS
Place the mango, limeade, tequila, and orange simple syrup into the blender.
Cover and blend (power level 4) until the mixture is smooth. Rub the lime wedge around the rims of 2 glasses. Coat the rims with the Tajín seasoning. Pour the blended mixture into 2 glasses and serve immediately.
CHEF'S NOTE
It's easy to make a batch of orange simple syrup from scratch. Just heat 1 cup water, 1 cup granulated sugar and the zest of 1 orange in a saucepan until hot and the sugar is dissolved, stirring occasionally. Remove from the heat and let cool. Strain out the zest. Cover and refrigerate for up to 1 month.
For an alcohol-free drink substitute ½ cup additional limeade for the tequila.
