Make-Ahead Root Vegetable Au Gratin
Check side dish off your holiday to-do list early by preparing this Make-Ahead Root Vegetable Au Gratin the day before. The flavors in this casserole are even better the next day, so just reheat and serve! We used red onion, sweet and gold potatoes, fennel and parsnip, but any root vegetables will work, so use your favorites. Toss the vegetables with garlic, rosemary, Gruyere and cream, top with Parmesan and breadcrumbs and bake for a perfect balance of creamy casserole and crispy topping.

INGREDIENTS
1 large red onion, cut in half and thinly sliced (about 2 cups)
1 large sweet potato, peeled and thinly sliced (about 3 cups)
2 large Yukon gold potatoes, peeled and thinly sliced (about 3 cups)
1 small bulb fennel, trimmed and thinly sliced (about 1 cup)
1 large parsnip, peeled and thinly sliced (about 1 cup)
3 cloves garlic, minced
2 teaspoons finely chopped fresh rosemary leaves
2 cups shredded Gruyère cheese
1 cup heavy cream
½ cup shredded Parmesan cheese
½ cup seasoned panko breadcrumbs
INSTRUCTIONS
Make the vegetable au gratin (1 day ahead). Set the oven to Convection Bake or Traditional Bake at 375°F. While the oven is heating, mix the vegetables, garlic, rosemary, cheese and heavy cream in a large bowl. Spread about a third of the vegetable mixture in a 13x9x2-inch baking dish. Arrange the remaining vegetables in rows on top, overlapping slightly. Season with salt and pepper.
Bake, uncovered, for 45 minutes. Remove the baking dish from the oven and sprinkle top with the Parmesan cheese and panko. Bake for an additional 15 minutes until topping is golden brown.
Let cool. Cover and refrigerate overnight.
To reheat, set oven to Convection Bake or Traditional Bake at 400°F. While the oven is heating, cover the dish with aluminum foil. Set the timer and bake for 20 to 25 minutes or until hot.
Chef’s Notes: This recipe will work with any combination of thinly-sliced root vegetables that equal 10 cups.
