NY STRIP STEAKS WITH GORGONZOLA CREAM SAUCE
NY Strip Steaks with Gorgonzola Cream Sauce
This restaurant-quality steak dish sounds difficult but Steakhouse mode makes it a breeze. The warm Gorgonzola cream sauce is the perfect complement to the steak.

INGREDIENTS
STEAKS:
2 NY Strip steaks, 1 ½ - 2-inches thick, that are roughly the same size
Salt and freshly ground pepper, to taste
GORGONZOLA CREAM SAUCE:
2 cup heavy cream
1 cup gorgonzola, crumbled
Freshly ground pepper to taste
4 tablespoons chopped parsley
1 teaspoon kosher salt*
EQUIPMENT:
Broil pan or broil safe sheet pan with rack
Oven food temperature probe
INSTRUCTIONS
Follow the prompts on the oven screen to set Steakhouse Mode. The mode will guide you through choosing your preferred doneness and properly placing the temperature probe.
Note that when cooking more than one large steak, only one have the probe inserted. Similarly sized steaks will both cook properly based on the temperature of the single probed steak.
Once Steakhouse Mode Step 1 is complete, remove the probe as instructed, then follow the prompts on your oven.
After the steaks have been seared, remove the pan from the oven. Allow steaks to rest for 5 minutes. This resting stage ensures your steaks come to the desired temperature and retain their juiciness.
MAKING THE GORGONZOLA CREAM SAUCE:
Heat the heavy cream in a saucepan, over medium heat. Once it starts to simmer, add the gorgonzola and whisk until the cheese has melted and the sauce thickens to the desired consistency, about 5 minutes. Remove from heat and add the black pepper and chopped parsley. Serve immediately with steaks.
Chef's Notes:
Notes about salt. Our recipes are tested using Diamond Crystal Kosher salt. If using another variety of salt reduce the amount by about half. Different grain sizes of salt pack differently in a measuring spoon, so if you’re measuring by volume you can end up with very different amounts of salt. One teaspoon of Diamond Crystal Kosher Salt has about 3g of salt, whereas one teaspoon of Morton Table Salt and one teaspoon of Morton Kosher Salt have about 6g of salt each. Different salts also taste different, so it’s a good idea to pay attention to salt type and adjust for your preferences.
