Pizza Dough

Enough dough for four 9" pizzas

INGREDIENTS
500 grams / 4 cups bread flour
15 grams / 1 tablespoon sugar
9 grams / 1 teaspoon salt
7 g / 2¼ teaspoon Instant dry yeast
360 grams warm water
15 grams / 1 tablespoon olive oil
INSTRUCTIONS
Using the Smart Mixer scale weigh flour, sugar, salt and yeast in to bowl. Attach the the dough hook and set the mixer to Stir. When dry ingredients are combined, add the water.
Combine on level 1 until all the flour is well incorporated, about 3 minutes. Then, knead on level 2 for 15 - 20 minutes
When the dough is soft and shiny but still slightly sticky shape it into a ball. Place the dough in an oiled bowl seam side down. Coat the surface with oil to prevent drying. Cover with a clean kitchen cloth or plastic wrap.
Leave in a warm place. Let rise for 60 to 90 minutes until it doubles in volume.
When the has doubled, transfer it to a well-dusted floured surface. Punch down and shape it into a small log. Divide the dough into four rounds.
Let the dough rest again for 10 minutes to allow it to relax. Then stretch in to shape, top and bake.
