INGREDIENTS
1 pound white fish, skin removed (cod, mahi-mahi, or halibut)
1 tablespoon avocado oil
1 ½ teaspoon cumin
1 ½ teaspoon chili powder
1 ½ teaspoon lime chili salt
Spicy Mayo
½ cup mayonnaise
1-4 teaspoons hot sauce (to taste)
1 teaspoon fresh lime juice
For Serving
8 – 10 corn tortillas
Lime wedges
Quick Pickled Red Onions
Fresh cilantro
INSTRUCTIONS
Preheat oven to 400 degrees F, and line a baking sheet with parchment paper.
Cut the fish into large chunks and add to a medium bowl. Toss with oil, cumin, chili powder, and lime chili salt. The fish should be well coated with the spices.
Transfer to parchment-lined baking sheet, arrange in a single layer, and bake for 10-12 minutes or until fish is cooked through.
While fish is baking, prepare the spicy mayo. Combine mayonnaise, hot sauce and lime juice in a small bowl. Prepare any additional toppings you’d like with the tacos, such as guacamole, pickled red onions, fresh herbs, and lime wedges.
To serve, warm tortillas and top each with a drizzle of spicy mayo, 2 pieces of fish, and sprinkle of pickled red onions. Serve with lime wedges and fresh cilantro.
