T-BONE STEAK WITH CHIMICHURRI
T-Bone Steak with Chimichurri
A perfectly cooked steak needs a perfect condiment to make it shine. Chimichurri is a classic Argentinian sauce that adds bright, acidic flavor to any steak recipe. If you don’t like the flavor of cilantro, you can use more flat-leaf parsley in its place.

INGREDIENTS
STEAKS:
2 (2-inch-thick) T-Bone steaks, about 1 ¼ pounds each
2 teaspoons coarse kosher salt*
Freshly ground black pepper, to taste
CHIMICHURRI:
½ cup firmly packed flat-leaf parsley
½ cup packed cilantro
2 tablespoons fresh oregano
1 small garlic clove
1 small shallot
1 tablespoon champagne vinegar
1 tablespoon fresh lime juice
⅓ cup olive oil
¼ teaspoon red chili flakes
Salt to taste
EQUIPMENT:
Broil pan or broil safe sheet pan with rack
Oven food temperature probe
INSTRUCTIONS
Season steaks with salt and pepper at least 30 minutes and up to 1 hour before you plan to cook them. Place the steaks on the broil pan grid. Cover loosely with plastic wrap and let stand at room temperature.
Follow the prompts on the oven screen to set Steakhouse Mode. The mode will guide you through choosing your preferred doneness and properly placing the temperature probe.
Note that when cooking more than one large steak, only one have the probe inserted. Similarly sized steaks will both cook properly based on the temperature of the single probed steak.
Once Steakhouse Mode Step 1 is complete, remove the probe as instructed, then follow the prompts on your oven.
After the steaks have been seared, remove the pan from the oven. Allow steaks to rest for 5 minutes. This resting stage ensures your steaks come to the desired temperature and retain their juiciness.
While steaks are cooking make the chimichurri sauce. Finely chop the parsley, oregano and garlic or shallot. Place in a medium bowl.
Stir in the vinegar, lime juice, olive oil and chili flakes. Add salt to taste.
After resting, transfer steaks to a cutting board and slice. Serve with chimichurri sauce.
Chef's Notes:
*Notes about salt. Our recipes are tested using Diamond Crystal Kosher salt. If using another variety of salt reduce the amount by about half. Different grain sizes of salt pack differently in a measuring spoon, so if you’re measuring by volume you can end up with very different amounts of salt. One teaspoon of Diamond Crystal Kosher Salt has about 3g of salt, whereas one teaspoon of Morton Table Salt and one teaspoon of Morton Kosher Salt have about 6g of salt each. Different salts also taste different, so it’s a good idea to pay attention to salt type and adjust for your preferences.
