INGREDIENTS
2 tablespoons butter
4 eggs
4 brioche buns, toasted
2 cups loosely packed arugula
4 slices pancetta
4 slices cheese
Spicy Mayo
Salt and pepper

INSTRUCTIONS
In a large pan, melt butter over medium heat. Fry eggs to desired doneness:
- Sunny Side Up: cook eggs on one side, for 2-3 minutes, until whites are set
- Over Easy: cook eggs for 2 minutes, flip and cook for a few seconds more for runny yolk
- Over Medium: cook eggs for 2 minutes, flip and cook for an additional minute for a mostly set yolk
- Over Hard: cook eggs for 2 minutes, flip and cook for 3 minutes until the yolk is completely set
While eggs are cooking fry the pancetta until crispy and toast buns.
When eggs are at desired doneness top with cheese. Cover pan briefly to allow cheese to melt.
To assemble sandwiches, place a handful of arugula on the bottom bun, top with egg and pancetta. Add spicy mayo and top of bun. Serve immediately.
