INGREDIENTS
2 tablespoons olive oil
4 skinless, boneless chicken breasts (about 1 ¼ pounds)
1 teaspoon dried Italian seasoning
½ teaspoon garlic powder
4 thin slices prosciutto
2 cups grape or cherry tomatoes
4 ounces fresh mozzarella, thinly sliced
4 cups baby arugula or baby spinach
1 tablespoon thinly sliced fresh basil
2 tablespoons balsamic vinegar glaze (optional)
INSTRUCTIONS
Set the toaster oven to Roast, Convection at 400°F. for 15 minutes. While the toaster oven is heating, brush the bottom of the toaster oven baking pan with ½ tablespoon oil. Season the chicken with salt and pepper and sprinkle with the Italian seasoning and garlic powder.
Place the seasoned chicken on the baking pan. Top with the prosciutto. Arrange the tomatoes around the pan. Drizzle with the remaining 1½ tablespoons oil.
Roast until the internal temperature of the chicken reaches 165°F.
Top the chicken with the cheese. Roast for another 5 minutes or until the cheese is melted.
Serve the chicken and tomatoes over the arugula. Sprinkle with the basil and drizzle with the balsamic glaze, if desired.
RECIPE NOTES
To make your own balsamic glaze simmer 1 cup balsamic vinegar in a 1-quart saucepan over medium heat for 15 minutes or until it's reduced and syrupy. Let cool. Cover and refrigerate for up to 1 month.
