BBQ Rubbed & Smoked Baby Back Ribs with Omaha Steaks
INGREDIENTS & TOOLS
Omaha Steaks Baby Back Ribs, 3 full racks
1 stick of butter
Brown sugar (for rub and for wrapping the ribs)
Aluminum foil
All Purpose BBQ Rub

- 2 tbsp brown sugar
- 2 tbsp paprika
- 1 tbsp black pepper
- 1 tbsp kosher salt
- ½ tbsp garlic powder
- ½ tbsp onion powder
- ½ tbsp ground mustard
- ½ tsp cayenne pepper
- ½ tsp cumin
INSTRUCTIONS
Prep
- Cut each rack of ribs in half and trim slightly as needed so two halves will fit on each wire smoker rack.
- Optional: Remove the membrane on the back side of each rack of ribs.
- Liberally season front and back of each half-rack of ribs with BBQ rub.
Cook (Approx. 5 Hours Total for Smoke, Wrap and Finish)
- Preheat the smoker to 250° F, and select smoke level 5.
- Once preheated, insert ribs into smoker (up to 3 full racks), and start the smoke.
Smoke (2.5 – 3 Hours)
Allow to cook for about 2.5 to 3 hours or until the color/bark on the ribs is mahogany colored.
Tip: If using all 3 smoker racks, rotate at the 1.5 hour mark by swapping the top and bottom racks to ensure even color/cooking.
Wrap (1.5 Hours)
- Clear the smoke and remove the ribs from the smoker.
- Place a double layer of aluminum foil on the counter.
- Add 3 pats of butter spanning the width of one half-rack of ribs to the center of the foil.
- Add a generous sprinkling of brown sugar over the pats of butter.
- Remove a half-rack of ribs from the smoker and place meat side down over the butter and brown sugar.
- Wrap the foil tightly around the ribs being careful not to tear the foil.
- Repeat the butter/brown sugar foil wrap for all of the other half-racks of ribs.
- Return all foil-wrapped ribs to the smoker meat side down and continue cooking for an additional 1.5 hours.
Finish (1 hour)
- Remove the foil-wrapped ribs from the smoker.
- Unwrap the foil from each and return the ribs meat side up on the wire smoker racks.
- Optional: Lightly brush each half-rack of ribs with your favorite BBQ sauce (don’t overdo it, the flavor is already amazing!).
- Return all unwrapped ribs to the smoker continuing at 250° F for 1 hour.
Tip: Turn the smoke back on level 5 for this phase for even more smoke flavor!
