Chive and Corn Whipped Butter
Creamy butter whipped with chives, fresh corn and a bit of brown sugar. Pairs perfectly with crispy Summer Corn Hoecakes!
1 lb Compound Butter

INGREDIENTS

1 pound unsalted butter, at room temperature

¼ cup fresh chives, finely chopped

½ cup scraped corn husk, from 3-4 husks (or ½ cup finely chopped corn)

1 tablespoon lime or lemon zest

2-3 tablespoons brown sugar (to taste)

1-2 teaspoon kosher salt (to taste)
INSTRUCTIONS
Add the butter to your GE Stand Mixer fitted with the whisk attachment and whip on medium-low for 1-2 minutes to incorporate air. Add the chives, corn, lime zest, sugar, and salt and mix again to fully incorporate all ingredients.
Store in 4-ounce containers with lids in the refrigerator for up to two weeks or frozen for up to 3 months.
