Summertime Layered Salad
Creamy butter whipped with chives, fresh corn and a bit of brown sugar.
Pairs perfectly with crispy Summer Corn Hoecakes!
1 lb Compound Butter

INGREDIENTS

1 ½ cups bourbon ranch

6 cups chopped iceberg lettuce

2 cups (1 can) cooked black beans

3 cups corn kernels, about 3 ears

10 radishes, sliced

2 cups tortilla strips

Salt to taste
INSTRUCTIONS
To the bottom of an 8-10 cup trifle dish add 1 ½ cups bourbon ranch. Layer on the lettuce, then the black beans, then the corn, and then the radishes. Lightly salt and top with tortilla strips. Wrap and place in the refrigerator until you are ready to eat.
Can be made up to 4 hours in advance.
